
Looking for a fresh, homemade treat in minutes?
One of my favorites is a scone with fresh berries and a dollop of clotted cream. I happened upon Sticky Fingers Scone mix at my local Whole Foods Market a few weeks ago. This fabulous mix requires only water and takes only minutes to bake. I've used the mix twice and have gotten rave reviews from guests of all ages. While the scones are in the oven, I cut up whatever fresh berries I can get my hands on. In the picture taken by my lovely husband, I've used raspberries, blueberries and strawberries. While the name "clotted cream" can turn some off, you can substitute a scoop of ice cream to entice the smaller guests. But give it a try. It is delicious!
I definitely recommend making this dessert and taking to a friends house. The longer the berries are allowed to sit, the sweeter and more delicious the flavor.
To make:
1 package Sticky Fingers Original Scone Mix
1 package fresh strawberries
1 package fresh raspberries
1 package fresh blueberries
1 jar Luxury English clotted cream
sugar
Make scones according to directions. (Before placing in oven, I sprinkle each scone with a little bit of sugar.) While scones are baking, cut up strawberries and place in mixing bowl. Add raspberries and blueberries to mixing bowl. Gently stir berries and allow to sit.
To serve:
Place scone on plate. Cover with berries and a dollop of cream. Enjoy!
